To nejklasi\u010dt\u011bj\u0161\u00ed, nejz\u00e1kladn\u011bj\u0161\u00ed a nejjednodu\u0161\u0161\u00ed \u0161pan\u011blsk\u00e9 j\u00eddlo, kter\u00e9 doprov\u00e1z\u00ed ka\u017edou dom\u00e1cnost. Tortilla de patatas se \u010dasto j\u00ed k\u00a0sn\u00eddani, kolem poledn\u00edho spolu se skleni\u010dkou vermutu jako zob\u00e1n\u00ed p\u0159ed ob\u011bdem (kter\u00fd se b\u011b\u017en\u011b konzumuje a\u017e kolem druh\u00e9 nebo t\u0159et\u00ed hodiny odpoledne) a samoz\u0159ejm\u011b je nepostradateln\u00e1 ve\u010der, jako sou\u010d\u00e1st kultury tapas. Recept na tortillu ve \u0160pan\u011blsku funguje stejn\u011b v\u00fdbu\u0161n\u011b jako u n\u00e1s recept na bramborov\u00fd sal\u00e1t; ka\u017ed\u00e1 rodina m\u00e1 ten sv\u016fj osv\u011bd\u010den\u00fd recept v\u010detn\u011b f\u00edgl\u016f, kter\u00e9 se t\u00fdkaj\u00ed zp\u016fsobu kr\u00e1jen\u00ed brambor nebo spr\u00e1vn\u00e9ho zp\u016fsobu sma\u017een\u00ed. Na osma\u017een\u00ed p\u0159\u00edsad se b\u011b\u017en\u011b pou\u017e\u00edv\u00e1 oby\u010dejn\u00fd slune\u010dnicov\u00fd olej, sma\u017een\u00ed v olivov\u00e9m oleji je p\u0159ece jen trochu luxus \ud83d\ude42<\/li><li><strong>Olivov\u00fd olej <\/strong>na osma\u017een\u00ed tortilly<\/li><li><strong>Brambory<\/strong>. Na jednu st\u0159edn\u011b velkou tortillu, dle hladu pro 2-4 osoby, po\u010d\u00edtejte s p\u011bti v\u011bt\u0161\u00edmi bramborami o velikosti cca 100 g<\/li><li><strong>Vejce<\/strong>. Zlat\u00e9 pravidlo zn\u00ed: jedna cca 100 g brambora na jedno vejce<\/li><li><strong>Cibule<\/strong>. Cibule by nem\u011blo b\u00fdt p\u0159\u00edli\u0161 mnoho, na uveden\u00e9 mno\u017estv\u00ed brambor sta\u010d\u00ed jedna mal\u00e1 nebo polovina v\u011bt\u0161\u00ed cibule<\/li><li><strong>S\u016fl<\/strong><\/li><li>P\u0159\u00edpadn\u00e9 dal\u0161\u00ed p\u0159\u00edsady podle va\u0161\u00ed chuti (chorizo, paprika&#8230;)<\/li><\/ul>\n\n\n\n<p>Tortilla nen\u00ed slo\u017eit\u00e1 na p\u0159\u00edpravu, ale vy\u017eaduje trochu trp\u011blivosti. Za\u010dn\u011bte t\u00edm, \u017ee omyjete a o\u0161kr\u00e1bete brambory. Pot\u00e9 je pokr\u00e1jejte na mal\u00e9 nepravideln\u00e9 kousky, nep\u0159\u00edli\u0161 velk\u00e9 &#8211; \u0159ekn\u011bme tak 1 &#8211; 2 cm, aby se ide\u00e1ln\u011b osma\u017eily a v\u00fdsledn\u00e1 tortilla m\u011bla spr\u00e1vnou strukturu. Do p\u00e1nve nalijte slune\u010dnicov\u00fd olej a rozpalte ho. Nesp\u011bchejte a nep\u0159eh\u00e1n\u011bjte to se silou plamene. Do p\u00e1nve vlo\u017ete kousky brambor a pomalu je sma\u017ete, dokud nebudou dozlatava ope\u010den\u00e9 a uvnit\u0159 p\u011bkn\u011b <em>blanditos<\/em>, tj. m\u011bkk\u00e9. M\u011bjte na pam\u011bti, \u017ee brambory by se m\u011bly v oleji sp\u00ed\u0161e va\u0159it ne\u017e co jin\u00e9ho. K n\u00ed p\u0159idejte cokoliv dal\u0161\u00edho, \u010d\u00edm chcete svou tortillu ozvl\u00e1\u0161tnit, typick\u00e1 je nap\u0159\u00edklad \u010derven\u00e1 paprika (polovina a\u017e kus, nakr\u00e1jemn\u00e1 na obzvl\u00e1\u0161t\u011b jemn\u00e9 kousky o stran\u011b max 0,5 cm) nebo chorizo. Po osma\u017een\u00ed ji vylovte a nechte okapat spolu s bramborami.<\/p>\n\n\n\n<p>Zat\u00edmco p\u0159\u00edsady odpo\u010d\u00edvaj\u00ed, um\u00edchejte vaje\u010dnou sm\u011bs: do misky rozklepn\u011bte vaj\u00ed\u010dka, p\u0159idejte podle chuti s\u016fl a pro\u0161lehejte. P\u00e1nev pak vyt\u0159ete pap\u00edrovou ut\u011brkou a vlijte do n\u00ed trochu olivov\u00e9ho oleje, na kter\u00e9m budete p\u0159ipravovat tortillu.<\/p>\n\n\n\n<p>Jakmile je olej rozeh\u0159\u00e1t\u00fd, vlijte do p\u00e1nve p\u0159ipravenou sm\u011bs a na m\u00edrn\u00e9m plameni nechte tortillu zpevnit. Mimochodem, idiomatick\u00fd v\u00fdraz <em>darle vuelta a la tortilla<\/em>, obr\u00e1tit tortillu, ve \u0161pan\u011bl\u0161tin\u011b znamen\u00e1 n\u011bco jako (radik\u00e1ln\u011b) zvr\u00e1tit situaci. Tak si tedy dr\u017eme palce! P\u00e1nev uchopte do jedn\u00e9 ruky, p\u0159em\u00edst\u011bte ji pro jistotu nap\u0159\u00edklad nad d\u0159ez, druhou rukou popadn\u011bte velk\u00fd m\u011blk\u00fd tal\u00ed\u0159 a tortillu p\u0159iklopte, dlan\u00ed jej p\u0159itom uprost\u0159ed pevn\u011b p\u0159idr\u017eujte. Te\u010f to p\u0159ijde: bez v\u00e1h\u00e1n\u00ed oto\u010dte p\u00e1nev i s tal\u00ed\u0159em vzh\u016fru nohama. Te\u010f nechte tortillu zvolna dop\u00e9ct, m\u016f\u017ee to trvat u\u017e t\u0159eba jen dv\u011b minuty, pokud v\u00e1m stejn\u011b jako mn\u011b chutn\u00e1 uvnit\u0159 tekut\u011bj\u0161\u00ed. Takov\u00e1 \u00faprava se naz\u00fdv\u00e1 <em>poco cuajada<\/em>. Je-li va\u0161\u00edm c\u00edlem naproti tomu tortilla <em>bien cuajada<\/em>, zcela pevn\u00e1, pak ji ponechte na m\u00edrn\u00e9m ohni o p\u00e1r minut d\u00e9le.<\/p>\n\n\n\n<p>A je to!
