Pintxos jsou prost\u011b a jednodu\u0161e tapas, jejich\u017e pozn\u00e1vac\u00edm znamen\u00edm je napichov\u00e1tko \u010di p\u00e1r\u00e1tko, j\u00edm\u017e jsou jednotliv\u00e9 ingredience propojeny. Slovo &#8222;pincho&#8220; (\u010dte se jako &#8222;pin\u010do&#8220; toti\u017e ve \u0161pan\u011bl\u0161tin\u011b znamen\u00e1 bodec nebo jehla, a ozna\u010duj\u00ed se tak p\u0159enesen\u011b i v\u00fdsledn\u00e9 jednohubky. M\u00e1lokdy spolu pouh\u00e9 t\u0159i ingredience lad\u00ed natolik, \u017ee se po ka\u017ed\u00e9m kousku n\u00e1bo\u017en\u011b ol\u00edznete a p\u0159ejete si, aby ta slast nikdy, nikdy, nikdy neskon\u010dila. Baskick\u00e1 gilda (\u010dte se &#8222;childa&#8220;) se zrodila ve druh\u00e9 polovin\u011b \u010dty\u0159ic\u00e1t\u00fdch let 20. stolet\u00ed v baru Casa Vall\u00e9s, kter\u00fd mimochodem funguje v San Sebastianu od sv\u00e9ho zalo\u017een\u00ed v roce 1942 a\u017e dodnes. Tehdy tam\u011bj\u0161\u00ed \u0161tamgast o d\u0159\u00edve bezejmenn\u00e9 jednohubce prohl\u00e1sil, \u017ee je jako hlavn\u00ed postava filmu Gilda, uveden\u00e9ho do kin v roce 1946, p\u0159edstavovan\u00e1 Ritou Hayworth: zelen\u00e1, slan\u00e1 a tak trochu pikantn\u00ed. Sehnat v \u010desk\u00fdch podm\u00ednk\u00e1ch guindillas nen\u00ed nic slo\u017eit\u00e9ho, sta\u010d\u00ed nacpat n\u00e1zev do Googlu a vypadne v\u00e1m n\u011bkolik eshop\u016f s delikatesami, kde za cenu kolem 70 K\u010d za sklenici se\u017eenete origin\u00e1ln\u00ed \u0161pan\u011blsk\u00e9 papri\u010dky. Ve \u0161pan\u011blsk\u00e9 kuchyni je m\u00e1lokdy n\u011bkter\u00fd recept tes\u00e1n do kamene, a proto si na tomto m\u00edst\u011b zahraji na Jirku Babicu a porad\u00edm v\u00e1m, \u017ee m\u016f\u017eete guindillas vym\u011bnit za dobr\u00e9 beran\u00ed rohy (t\u0159eba v p\u0159\u00edpad\u011b, \u017ee d\u00e1v\u00e1te p\u0159ednost m\u00e9n\u011b pikantn\u00edm chut\u00edm). Guindillas p\u0159ekrojte nap\u016fl, abyste dostali \u00fahledn\u00e9 kousky o d\u00e9lce cca 2 &#8211; 3 cm. P\u0159ipravte si olivy, napichov\u00e1tka a tal\u00ed\u0159ek nebo t\u00e1cek na v\u00fdsledn\u00e9 produkty. Pak u\u017e to p\u016fjde r\u00e1z nar\u00e1z: \u010dapn\u011bte koktejlov\u00e9 p\u00e1r\u00e1tko a nap\u00edchn\u011bte nejprve jednu olivu, pak jeden nebo dva d\u00edlky papri\u010dek, n\u00e1sleduje an\u010dovi\u010dka slo\u017een\u00e1 na t\u0159etiny, dal\u0161\u00ed papri\u010dky a cel\u00e9 d\u00edlo uzav\u0159ete druhou olivou. Pokra\u010dujte s dal\u0161\u00edm p\u00e1r\u00e1tkem a <em>voil\u00e0<\/em> &#8211; za p\u00e1r minut si m\u016f\u017eete m\u00edchat drink. V misce sm\u00edchejte  olivov\u00fd olej, citronovou \u0161\u0165\u00e1vu a v\u00fd\u0161e uveden\u00e9 ko\u0159en\u00ed. P\u0159idejte kousky ku\u0159ec\u00edch prsou, dob\u0159e prom\u00edchejte, aby je marin\u00e1da v\u0161ude p\u011bkn\u011b obalila, a ulo\u017ete do chladu minim\u00e1ln\u011b na jednu hodinu. Pak rozpalte p\u00e1nev s trochou oleje a ku\u0159e ze v\u0161ech stran dob\u0159e ope\u010dte dozlatova.
