Onehdy na m\u011b ale z tabulky vyhled\u00e1vac\u00edch hesel v Google Analytics zasv\u00edtilo souslov\u00ed &#8222;pot\u0159ebuju se nap\u00edt \u0161pan\u011blsky&#8220;. Mo\u017en\u00e1 v\u00e1m to te\u010f p\u0159ijde k sm\u00edchu, ale v\u011bzte, \u017ee v re\u00e1lu se v\u00e1m podobn\u00fd v\u00fdraz m\u016f\u017ee docela dob\u0159e hodit. Nev\u011b\u0159\u00edte?<\/p>\n\n\n\n<p>\u0158\u00edjen 2015, poprv\u00e9 let\u00edm do Madridu &#8211; a sama. V kapse \u010derstv\u00fd diplom \u00farovn\u011b B2, tak \u010derstv\u00fd, \u017ee inkoust z tisk\u00e1rny \u0160pan\u011blsk\u00e9 kr\u00e1lovsk\u00e9 akademie na n\u011bm pomalu je\u0161t\u011b nesta\u010dil ani zaschnout. Drze p\u00ed\u0161u jedin\u00e9mu \u010dlov\u011bku, kter\u00e9ho jsem tehdy v Madridu znala, ex kolegovi z pr\u00e1ce, zda by mi neuk\u00e1zal m\u011bsto a nevzal m\u011b na moje historicky prvn\u00ed \u0161pan\u011blsk\u00e9 <em>tapeo<\/em>. Pon\u011bkud neochotn\u011b souhlasil (prov\u00e1zet cizince po va\u0161em m\u011bst\u011b je v\u017edycky trochu opruz, ne?), nicm\u00e9n\u011b m\u011b v den p\u0159\u00edletu asi v osm ve\u010der vyzvedl na recepci hotelu a vykli\u010dkovali jsme na ru\u0161nou madridskou Gran V\u00eda. Na chodn\u00edku se zb\u011b\u017en\u011b pro\u0161acoval a&#8230; &#8222;Pot\u0159ebuju si vybrat prachy,&#8220; sd\u011bluje mi. Chv\u00edli na n\u011bj civ\u00edm jako puk a p\u0159evrac\u00edm to slovo sem a tam. Pak mi kole\u010dka v hlavn\u011b sepnou a uv\u011bdom\u00edm si, \u017ee v\u00fdraz &#8222;prachy&#8220; jsem jednou vid\u011bla v u\u010debnici. V tom nen\u00e1padn\u00e9m \u010derven\u00e9m r\u00e1me\u010dku na konci lekce a pod \u010darou, nadepsan\u00e9m &#8222;N\u011bkter\u00e9 slangov\u00e9 a hovorov\u00e9 v\u00fdrazy&#8220;. V tu chv\u00edli mi do\u0161lo, do \u010deho jsem se to namo\u010dila. Str\u00e1v\u00edm p\u0159\u00ed\u0161t\u00ed hodiny s \u010dlov\u011bkem, kter\u00fd bude cel\u00fd ve\u010der mluvit <em>takhle<\/em>. Slangem, nevybran\u011b, bez ohledu na to, co jsem se j\u00e1 z \u010desk\u00e9 u\u010debnice za posledn\u00ed roky nau\u010dila. &#8222;Pot\u0159ebuju se nap\u00edt,&#8220; \u0159\u00edk\u00e1m na to bez rozm\u00fd\u0161len\u00ed, zd\u00e1nliv\u011b bez souvislosti, ale zato velmi pravdiv\u011b. <\/p>\n\n\n\n<p>Tak vid\u00edte! A\u0165 u\u017e si v t\u00e9 chv\u00edli o m\u011b myslel co cht\u011bl (a po letech p\u0159iznal, \u017ee si pomyslel \u017ee jsem p\u011bkn\u011b divn\u00e1), na skleni\u010dku a tapas jsme vyrazili. Ten ve\u010der jsem na Plaza de Santa Ana krom\u011b jin\u00fdch dobrot taky poprv\u00e9 ochutnala nekorunovanou kr\u00e1lovnu madridsk\u00fdch tapas &#8211; toti\u017e patatas bravas. A tak si o nich dnes n\u011bco pov\u00edme a samoz\u0159ejm\u011b nebude chyb\u011bt ani recept. A m\u00e1lem bych zapomn\u011bla &#8211; &#8222;pot\u0159ebuji se nap\u00edt&#8220; se \u0161pan\u011blsky \u0159ekne &#8222;necesito una copa&#8220;. Patatas bravas jsou tedy pe\u010den\u00e9 nebo sma\u017een\u00e9 brambory p\u0159elit\u00e9 pikantn\u00ed om\u00e1\u010dkou (tudy na tu &#8222;zu\u0159ivost&#8220;). Existuje mnoho rivality mezi Madridem a Barcelonou, ale patatas bravas Madridu nesebere ani ten nejtroufalej\u0161\u00ed Katal\u00e1nec. Jsou snad tou nejtypi\u010dt\u011bj\u0161\u00ed madridskou &#8222;tapou&#8220;, obl\u00edbenou pro svou jednoduchost a genialitu, s jakou dopl\u0148uj\u00ed sklenku vychlazen\u00e9ho piva.<\/p>\n\n\n\n<p>Prvn\u00ed patatas bravas (nebo jednodu\u0161e &#8222;las bravas&#8220;) se objevuj\u00ed v Madridu n\u011bkdy mezi 50. a 60. l\u00e9ty dvac\u00e1t\u00e9ho stolet\u00ed. Jejich fandov\u00e9 se nemohou dohodnout, ve kter\u00e9m baru to bylo p\u0159esn\u011b, proto\u017ee v pr\u016fb\u011bhu 60. let existovaly v centru hned dva podniky, p\u0159ed kter\u00fdmi na ochutn\u00e1vku &#8222;las bravas&#8220; st\u00e1ly dlouh\u00e9 fronty. Jedn\u00edm z nich byla Casa Pellico, v bl\u00edzkosti dne\u0161n\u00ed stanice metra La Latina, t\u00edm druh\u00fdm byl bar La Casona pobl\u00ed\u017e v\u00fd\u0161e zm\u00edn\u011bn\u00e9ho n\u00e1m\u011bst\u00ed Plaza de Santa Ana. Ani jeden z nich u\u017e dnes neexistuje, ale jejich \u0161tafetu na\u0161t\u011bst\u00ed p\u0159ebraly des\u00edtky a stovky jin\u00fdch madridsk\u00fdch bar\u016f. Co byste o nich je\u0161t\u011b m\u011bli v\u011bd\u011bt, ne\u017e ve \u0160pan\u011blsku vyraz\u00edte na ve\u010dern\u00ed &#8222;tapeo&#8220;? P\u0159edev\u0161\u00edm se nejedn\u00e1 o brambory zalit\u00e9 p\u00e1liv\u00fdm ke\u010dupem, to za prv\u00e9. Origin\u00e1ln\u00ed verze om\u00e1\u010dky se p\u0159ipravovala z v\u00fdvaru, mouky a p\u00e1liv\u00e9 papriky. Za druh\u00e9, kdy\u017e u\u017e \u017e\u00e1rliv\u00e1 Barcelona musela uznat prvenstv\u00ed Madridu v ot\u00e1zce patatas bravas, alespo\u0148 z nich vyrobila katal\u00e1nskou variantu: k p\u00e1liv\u00e9 om\u00e1\u010dce p\u0159idala je\u0161t\u011b \u010desnekovou alioli (lingvistick\u00e1 odbo\u010dka: v\u00fdraz poch\u00e1z\u00ed z katal\u00e1nsk\u00fdch slov &#8222;all i oli&#8220;, tzn. &#8222;\u010desnek a olej&#8220;), proto typicky v Barcelon\u011b dostanete om\u00e1\u010dky dv\u011b. D\u016frazn\u011b v\u00e1s ale na tomto m\u00edst\u011b varuji p\u0159ed podniky na barcelonsk\u00e9 t\u0159\u00edd\u011b La Rambla, nic lep\u0161\u00edho ne\u017e ke\u010dup a majon\u00e9za v\u00e1s tam ne\u010dek\u00e1.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Kam v Madridu na &#8222;las bravas&#8220; <\/strong><\/p>\n\n\n\n<p>Pokud chcete, aby v\u00e1\u0161 z\u00e1\u017eitek byl autentick\u00fd a nespadli jste do jedn\u00e9 z turistick\u00fdch past\u00ed, vsa\u010fte v p\u0159\u00edpad\u011b patatas bravas na n\u011bkter\u00fd z n\u00e1sleduj\u00edc\u00edch podnik\u016f:<\/p>\n\n\n\n<ul><li>Bar <strong>Los Chicos<\/strong>, Calle de Guzm\u00e1n el Bueno \u010d. 33. Bar, kde serv\u00edruj\u00ed jedny z nejlep\u0161\u00edch patatas bravas v Madridu. Metro: L3, stanice Arg\u00fcelles.<\/li><li>Bar <strong>Las Bravas<\/strong> v Calle de \u00c1lvarez Gato \u010d. 3 troufale prohla\u0161uje, \u017ee jeho patatas bravas jsou ty nejlep\u0161\u00ed z cel\u00e9ho Madridu. Svou om\u00e1\u010dku si nechali dokonce patentovat! Pokud propadnete jej\u00edmu kouzlu, m\u016f\u017eete si ji koupit s sebou do p\u0159inesen\u00e9 n\u00e1doby. \u017d\u00e1dn\u00e9 konzervy &#8211; om\u00e1\u010dka neobsahuje jedinou um\u011blou p\u0159\u00edsadu. Metro: L1, L2, L3, stanice Sol.<\/li><li>Bar <strong>Docamar<\/strong>, Calle de Alcal\u00e1 \u010d. 337 je jedn\u00edm z typick\u00fdch, ale opravdu typick\u00fdch madridsk\u00fdch bar\u016f. Vysok\u00e9 sudy, kter\u00e9 slou\u017e\u00ed jako stolky pro tapeo &#8222;na stoj\u00e1ka&#8220; na chodn\u00edku p\u0159ed barem, specializace na patatas bravas u\u017e od roku 1963 a dal\u0161\u00ed klasick\u00e9 madridsk\u00e9 dobroty jako t\u0159eba croquetas nebo cocido madrile\u00f1o. Ach &#8211; co dodat. Metro: L5, stanice Quintana.<\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Dom\u00e1c\u00ed patatas bravas<\/strong><\/p>\n\n\n\n<p>N\u011bco v\u00e1m prozrad\u00edm. Prodlou\u017een\u00fd v\u00edkend 15. &#8211; 17. kv\u011btna jsem m\u011bla str\u00e1vit v Madridu. Koupen\u00e9 letenky, l\u00edstek do divadla na Gran V\u00eda, n\u011bjak\u00e9 ty pl\u00e1ny. Pak p\u0159i\u0161el koronavirus a d\u00e1l u\u017e ten p\u0159\u00edb\u011bh v\u0161ichni zn\u00e1me. Ne\u017e se v Docamaru vy\u0161plh\u00e1m na vysokou \u017eidli\u010dku u baru a objedn\u00e1m si ty nejp\u00e1liv\u011bj\u0161\u00ed patatas bravas a to nejstuden\u011bj\u0161\u00ed pivo, jak\u00e9 mi nab\u00eddnou, je\u0161t\u011b ute\u010de hodn\u011b vody v potoce. Do t\u00e9 doby mi nezb\u00fdv\u00e1 nic jin\u00e9ho, ne\u017e si tuhle lah\u016fdku p\u0159ipravit doma. Pak je um\u00edst\u011bte do pek\u00e1\u010dku, lehce post\u0159\u00edkejte olivov\u00fdm olejem, posolte a opep\u0159ete. Pak k nim \u0161oupn\u011bte oloupan\u00fd strou\u017eek \u010desneku a v\u011btvi\u010dku rozmar\u00fdnu a str\u010dte je do trouby na 45 minut. V pr\u016fb\u011bhu \u010dasu brambory \u010das od \u010dasu prom\u00edchejte, aby se p\u011bkn\u011b opekly ze v\u0161ech stran. Deset minut p\u0159ed koncem procesu m\u016f\u017eete zv\u00fd\u0161it teplotu na 200 stup\u0148\u016f.<\/p>\n\n\n\n<p>Pokra\u010dujeme om\u00e1\u010dkou. Podot\u00fdk\u00e1m, \u017ee recept\u016f na ni je mnoho a nesna\u017e\u00edm se prosadit ten &#8222;sv\u016fj&#8220; jako jedin\u00fd spr\u00e1vn\u00fd, je ale p\u0159\u00edjemn\u011b pikantn\u00ed a proto\u017ee om\u00e1\u010dka nen\u00ed zahu\u0161t\u011bn\u00e1 moukou, je i lehk\u00fd. Pokud budete brambory p\u00e9ct v troub\u011b (a ne sma\u017eit), \u017e\u00e1dn\u00e1 stra\u0161n\u00e1 kalorick\u00e1 bomba se nekon\u00e1 &#8211; pr\u00e1v\u011b naopak. Tak tedy, nejprve vezm\u011bte omyt\u00e1 raj\u010data a nastrouhejte je (norm\u00e1ln\u011b na struhadle, slupky si nev\u0161\u00edmejte &#8211; p\u0159irozen\u011b v\u00e1m nakonec v\u011bt\u0161ina z n\u00ed z\u016fstane v ruce). Dejte stranou. Omyjte papri\u010dku, nakr\u00e1jejte ji na mal\u00e9 kous\u00ed\u010dky a p\u00e1r sekund ji ope\u010dte na tro\u0161i\u010dce olivov\u00e9ho oleje v kastr\u016flku nebo na p\u00e1nvi\u010dce. Sundejte n\u00e1dobu z ohn\u011b, p\u0159isypte po l\u017ei\u010dce sladk\u00e9 i p\u00e1liv\u00e9 papriky, prom\u00edchejte a p\u0159idejte l\u017e\u00edci \u010derven\u00e9ho octa. Nechte chvilku pova\u0159it a p\u0159idejte nastrouhan\u00e1 raj\u010data.
