M\u00e1-li \u010desk\u00e1 kuchyn\u011b sv\u00e9ho v\u00fdrazn\u00e9ho solit\u00e9ra ve sv\u00ed\u010dkov\u00e9 om\u00e1\u010dce s knedl\u00edkem, ve \u0160pan\u011blsku hraje roli nejv\u00fdznamn\u011bj\u0161\u00edho reprezentanta n\u00e1rodn\u00ed kuchyn\u011b pr\u00e1v\u011b paella. Cizinec nebo na\u0161inec &#8211; kdo kdy polo\u017eil nohu na \u0161pan\u011blskou p\u016fdu, ten zn\u00e1 \u0161irok\u00e9 m\u011blk\u00e9 p\u00e1nve s v\u00fdrazn\u00fdmi uchy, napln\u011bn\u00e9 vo\u0148avou sm\u011bs\u00ed r\u00fd\u017ee, masa, zeleniny a ko\u0159en\u00ed. Je dost mo\u017en\u00e9, \u017ee leto\u0161n\u00ed epidemie COVID-19 v\u00e1m zabr\u00e1n\u00ed vychutnat si paellu v jej\u00edm p\u0159irozen\u00e9m prost\u0159ed\u00ed, p\u0159ipravovanou na otev\u0159en\u00e9m ohni a tak bl\u00edzko st\u0159edomo\u0159sk\u00fdch pl\u00e1\u017e\u00ed, \u017ee kdy\u017e usednete ke sv\u00e9 porci na stole pokryt\u00e9m \u010dervenob\u00edle kostkovan\u00fdm ubrusem, k\u016f\u017ei m\u00e1te je\u0161t\u011b rozp\u00e1lenou dopoledn\u00edm sluncem a chodidla pln\u00e1 p\u00edsku. To ale neznamen\u00e1, \u017ee si nem\u016f\u017eete vychutnat k\u00e1vu u dne\u0161n\u00edho pov\u00edd\u00e1n\u00ed o jej\u00ed historii, nebo si uva\u0159it k ob\u011bdu jednu z verz\u00ed t\u00e9to (p\u016fvodem valencijsk\u00e9) pochoutky podle postupu na konci \u010dl\u00e1nku.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>N\u00e1zev a historie<\/strong><\/p>\n\n\n\n<p>Pro\u010d se paella jmenuje paella? Kdy\u017e ve \u0160pan\u011blsku n\u011bkdy mezi 15. a 16. stolet\u00edm spat\u0159ily sv\u011btlo sv\u011bta prvn\u00ed verze paelly, je\u0161t\u011b se j\u00ed \u0159\u00edkalo <strong>arroz a la valenciana<\/strong>, tedy &#8222;r\u00fd\u017ee po valencijsku&#8220;.  Paella se zrodila jako odpoledn\u00ed j\u00eddlo venkovsk\u00fdch vrstev, jeho\u017e z\u00e1kladem byla r\u00fd\u017ee p\u011bstovan\u00e1 v okol\u00ed Valencie na rozs\u00e1hl\u00fdch r\u00fd\u017eovi\u0161t\u00edch u jezera Alb\u00fafera a pot\u00e9 to, co m\u011bli zrovna venkovan\u00e9 p\u0159i pr\u00e1ci na pol\u00edch p\u0159i ruce. Tedy nejr\u016fzn\u011bj\u0161\u00ed \u010derstv\u00e1 zelenina, lu\u0161t\u011bniny, olivov\u00fd olej, \u0161afr\u00e1n a z masa nejprve \u0161neci, postupem \u010dasu ku\u0159e, kr\u00e1l\u00edk nebo kachna. V\u0161echny uveden\u00e9 ingredience se pomalu va\u0159ily dohromady v jedn\u00e9 p\u00e1nvi na otev\u0159en\u00e9m ohni. A pr\u00e1v\u011b charakteristick\u00e1 dvouuch\u00e1 p\u00e1nev dala &#8222;r\u00fd\u017ei po valencijsku&#8220; jej\u00ed dne\u0161n\u00ed mezin\u00e1rodn\u00ed jm\u00e9no. &#8222;Paella&#8220; je toti\u017e katal\u00e1nsk\u00fd (a t\u00edm i valencijsk\u00fd &#8211; nezapome\u0148me, \u017ee ve Valencii se mluv\u00ed katal\u00e1nsky) v\u00fdraz pro &#8222;p\u00e1nev&#8220;, poch\u00e1z\u00ed z latinsk\u00e9ho slova &#8222;patella&#8220;.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" width=\"768\" height=\"1024\" src=\"https:\/\/spanelskodokapsy.cz\/wp-content\/uploads\/2020\/04\/IMG_4619-768x1024.jpg\" alt=\"\" class=\"wp-image-1534\" srcset=\"https:\/\/spanelskodokapsy.cz\/wp-content\/uploads\/2020\/04\/IMG_4619-768x1024.jpg 768w, https:\/\/spanelskodokapsy.cz\/wp-content\/uploads\/2020\/04\/IMG_4619-225x300.jpg 225w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>P\u0159\u00edprava paelly pod \u0161ir\u00fdm nebem, Andalusie<\/figcaption><\/figure>\n\n\n\n<p>Z valencijsk\u00fdch pol\u00ed na mezin\u00e1rodn\u00ed st\u016fl je je\u0161t\u011b dlouh\u00e1 cesta. Vede p\u0159es prvn\u00ed ti\u0161t\u011bnou katal\u00e1nskou kucha\u0159ku, v origin\u00e1le <strong>Llibre del Coch<\/strong> (&#8222;Kucha\u0159sk\u00e1 kniha&#8220;) z roku 1520 a rostouc\u00ed oblibu valencijsk\u00e9ho pokrmu na celo\u0161pan\u011blsk\u00e9 \u00farovni v pr\u016fb\u011bhu n\u00e1sleduj\u00edc\u00edch stalet\u00ed. A stejn\u011b jako v p\u0159\u00edpad\u011b tapas, i tady m\u016f\u017eete vyslechnout celou \u0159adu pov\u011bst\u00ed, kter\u00e9 se s paellou spojuj\u00ed. Tak t\u0159eba, \u017ee b\u011bhem napoleonsk\u00e9ho vp\u00e1du do \u0160pan\u011blska si jeden francouzsk\u00fd gener\u00e1l natolik zamiloval paellu od m\u00edstn\u00ed kucha\u0159ky, a\u017e prohl\u00e1sil, \u017ee za ka\u017edou dal\u0161\u00ed propust\u00ed jednoho \u0161pan\u011blsk\u00e9ho v\u011bzn\u011b. \u017dena mu pak ka\u017ed\u00fd den p\u0159ipravila novou verzi paelly, a\u017e pr\u00fd takto osvobodila celkem 176 zajat\u00fdch \u0160pan\u011bl\u016f.<\/p>\n\n\n\n<p>V\u011brohodnost uveden\u00e9ho p\u0159\u00edb\u011bhu je samoz\u0159ejm\u011b diskutabiln\u00ed, ale faktem je, \u017ee skute\u010dnou mezin\u00e1rodn\u00ed proslulost z\u00edskala paella ve druh\u00e9 polovin\u011b 19. stolet\u00ed, a to prost\u0159ednictv\u00edm tehdy tak popul\u00e1rn\u00edch &#8222;sv\u011btov\u00fdch v\u00fdstav&#8220;. Prvn\u00ed z nich se konaly v roce 1851 a 1862 v Lond\u00fdn\u011b, n\u00e1sledovala Pa\u0159\u00ed\u017e (1867), Filadelfie (1876), Antverpy (1885) a Barcelona (1887). \u0160pan\u011blsko bylo na t\u011bchto akc\u00edch pravideln\u011b reprezentov\u00e1no mimo jin\u00e9 tak\u00e9 arm\u00e1dou valencijsk\u00fdch kucha\u0159\u016f, kter\u00e1 s c\u00edlem ohromit ostatn\u00ed zem\u011b p\u0159ipravovala paellu z t\u011bch nejlep\u0161\u00edch vstupn\u00edch surovin. A povedlo se, u\u017e v roce 1867 p\u00ed\u0161e Jos\u00e9 de Castro y Serrano, \u010dlen \u0160pan\u011blsk\u00e9 kr\u00e1lovsk\u00e9 akademie ve sv\u00fdch pozn\u00e1mk\u00e1ch, \u017ee &#8222;polovina Pa\u0159\u00ed\u017ee st\u00e1la frontu na ochutn\u00e1vku&#8220; v restauraci, kde se serv\u00edrovala valencijsk\u00e1 paella.<\/p>\n\n\n\n<p>Po skon\u010den\u00ed \u0160pan\u011blsk\u00e9 ob\u010dansk\u00e9 v\u00e1lky &#8211; o kter\u00e9 se mimochodem traduje, \u017ee frankistick\u00e9 odd\u00edly st\u0159\u00edlely na ty, kdo na otev\u0159en\u00e9m ohni p\u0159ipravovali valencijskou paellu, proto\u017ee Valencia byla loaj\u00e1ln\u00ed republik\u00e1nsk\u00e9mu t\u00e1boru (i zde m\u016f\u017eeme o pravdivosti informac\u00ed pochybovat) &#8211; u\u017e je paella pevnou sou\u010d\u00e1st\u00ed \u0161pan\u011blsk\u00e9ho j\u00eddeln\u00ed\u010dku. Do zem\u011b se za\u010d\u00ednaj\u00ed hrnout miliony turist\u016f a spolu s nimi se proslulost paelly \u0161\u00ed\u0159\u00ed do cel\u00e9ho sv\u011bta.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Spr\u00e1vn\u00fd recept na paellu&#8230;<\/strong><\/p>\n\n\n\n<p>&#8230; neexistuje. U\u017e s ohledem na p\u016fvod paelly jako j\u00eddla, kter\u00e9 je p\u0159ipravov\u00e1no z m\u00edstn\u00edch surovin a zeleniny, kter\u00e1 je pr\u00e1v\u011b v sez\u00f3n\u011b, to ani nen\u00ed mo\u017en\u00e9. Dejme tomu, \u017ee se d\u00e1 \u0159\u00edci, \u017ee typick\u00e1 <strong>paella valenciana<\/strong> obsahuje dva druhy masa (ku\u0159e a kr\u00e1l\u00edka), zelen\u00e9 fazolkov\u00e9 lusky, \u0161irok\u00e9 b\u00edl\u00e9 fazole, raj\u010data a arty\u010doky, ale fakticky plat\u00ed, \u017ee kolik lid\u00ed, tolik recept\u016f. Pokud naraz\u00edte na v\u00fdraz <strong>paella de marisco<\/strong>, znamen\u00e1 to, \u017ee paella m\u00edsto masa obsahuje mo\u0159sk\u00e9 plody, v p\u0159\u00edpad\u011b <strong>paella mixta<\/strong> (jak u\u017e n\u00e1zev napov\u00edd\u00e1) mix masa a mo\u0159sk\u00fdch plod\u016f a potkat m\u016f\u017eete i <strong>paella de verduras<\/strong>, paellu \u010dist\u011b zeleninovou.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" width=\"768\" height=\"1024\" src=\"https:\/\/spanelskodokapsy.cz\/wp-content\/uploads\/2020\/04\/IMG_7804-768x1024.jpg\" alt=\"\" class=\"wp-image-1536\" srcset=\"https:\/\/spanelskodokapsy.cz\/wp-content\/uploads\/2020\/04\/IMG_7804-768x1024.jpg 768w, https:\/\/spanelskodokapsy.cz\/wp-content\/uploads\/2020\/04\/IMG_7804-225x300.jpg 225w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><figcaption>Paella de marisco, Katal\u00e1nsko<\/figcaption><\/figure>\n\n\n\n<p>Je\u0161t\u011b slovo o p\u00e1nvi, r\u00fd\u017ei a ko\u0159en\u00ed, a m\u016f\u017eeme se v\u011bnovat na\u0161emu fotoreceptu. P\u00e1nev na paellu se \u0161pan\u011blsky naz\u00fdv\u00e1 &#8222;paellera&#8220; (katal\u00e1nsky je to &#8222;paella&#8220;, jak u\u017e bylo \u0159e\u010deno v\u00fd\u0161e). D\u011bl\u00e1 se z le\u0161t\u011bn\u00e9ho \u017eeleza, m\u00edsto dr\u017eadla m\u00e1 dv\u011b velk\u00e1 ucha, jej\u00ed pr\u016fm\u011br je minim\u00e1ln\u011b 22 centimetr\u016f a je m\u011blk\u00e1, maxim\u00e1ln\u011b 5 &#8211; 10 cm. Velikost p\u00e1nve ur\u010duje po\u010det porc\u00ed, tak\u017ee byste m\u011bli hledat \u00fadaj o tom, pro kolik osob je p\u0159\u00edslu\u0161n\u00e1 n\u00e1doba ur\u010dena. Na \u010desk\u00fdch e-shopech najdete pod n\u00e1zvem &#8222;p\u00e1nev na paellu&#8220; za p\u00e1r stovek bohat\u00fd v\u00fdb\u011br variant, a tud\u00ed\u017e nen\u00ed \u017e\u00e1dn\u00fd d\u016fvod k tomu, flikovat p\u0159\u00edpravu na oby\u010dejn\u00e9 p\u00e1nvi &#8211; tu si nechte na steaky.<\/p>\n\n\n\n<p>Je\u0161t\u011b d\u016fle\u017eit\u011bj\u0161\u00ed je spr\u00e1vn\u00fd v\u00fdb\u011br r\u00fd\u017ee. R\u00fd\u017ee by m\u011bla b\u00fdt kulatozrnn\u00e1, s leskl\u00fdmi zrnky, kter\u00e1 dob\u0159e absorbuj\u00ed vodu a v\u00fdvar. Nejkvalitn\u011bj\u0161\u00ed r\u00fd\u017ee na paellu je valencijsk\u00e1 &#8222;bomba&#8220;, za h\u0159\u00ed\u0161n\u00e9 pen\u00edze ji dostanete i u n\u00e1s (j\u00e1 si ji ov\u0161em sprost\u011b voz\u00edm ze \u0160pan\u011blska v p\u0159\u00edru\u010d\u00e1ku mezi pr\u00e1dlem, najdete v m\u00edstn\u00edch supermarketech). Pokud se v\u00e1m nechce d\u00e1t za r\u00fd\u017ei majlant, zvolte modrou SOS Classic, najdete ji v Globusu. Typickou \u017elutou barvu paelle dod\u00e1v\u00e1 \u0161afr\u00e1n (nebo jeho n\u00e1hra\u017eky), p\u0159i n\u00e1kupu ko\u0159en\u00ed na paellu v \u010desk\u00fdch podm\u00ednk\u00e1ch byste m\u011bli zkontrolovat, \u017ee obsahuje zhruba tuto sm\u011bs: kurkuma, paprika, \u0161afr\u00e1n, \u010desnek, pep\u0159, bobkov\u00fd list a h\u0159eb\u00ed\u010dek. Ko\u0159en\u00ed by m\u011blo ide\u00e1ln\u011b vypadat jako oran\u017eov\u00fd pr\u00e1\u0161ek, kter\u00fd se beze zbytku rozpust\u00ed (aby paellu pouze obarvil, ale nenechal v\u00e1m v n\u00ed, lidov\u011b \u0159e\u010deno, \u017e\u00e1dn\u00fd bordel). P\u0159\u00edprava paelly vy\u017eaduje klidn\u00fd \u0161pan\u011blsk\u00fd p\u0159\u00edstup a dobrou n\u00e1ladu.<\/li><li>P\u0159ipravte si zeleninu: fazolky a raj\u010data pokr\u00e1jejte na men\u0161\u00ed kousky, \u010desnek nadrobno a p\u0159ipravte v\u00fdvar.
