Nacucan\u00e9 n\u00edzk\u00e9 \u0161ed\u00e9 mraky se rozprost\u00edraly, kam a\u017e oko dohl\u00e9dlo. Jen pades\u00e1tipatrov\u00e9 \u00a0mrakodrapy ozna\u010dovan\u00e9 jako \u201cCuatro Torres\u201d (\u010cty\u0159i v\u011b\u017ee) prop\u00edchly to \u0161ed\u00e9 obla\u010dn\u00e9 mo\u0159e a p\u0159i pohledu z letadla nazna\u010dovaly, \u017ee n\u011bkde kolem se nach\u00e1z\u00ed hlavn\u00ed m\u011bsto \u0160pan\u011blska. P\u0159ist\u00e1vac\u00ed dr\u00e1hy madridsk\u00e9ho leti\u0161t\u011b Barajas byly mokr\u00e9 od vytrval\u00e9ho studen\u00e9ho de\u0161t\u00edku a venkovn\u00ed teplota se vysm\u00edvala statistik\u00e1m \u0161pan\u011blsk\u00e9ho po\u010das\u00ed. Sta\u010dilo vystr\u010dit z letadla nos a bylo jasn\u00e9, \u017ee kritick\u00e1 situace si \u017e\u00e1d\u00e1 radik\u00e1ln\u00ed \u0159e\u0161en\u00ed. Ostatn\u011b se j\u00ed tak i \u010dasto \u0159\u00edk\u00e1 \u2013 \u201esopa de ajo\u201c. Ne ka\u017ed\u00fd by ve \u0161pan\u011blsk\u00e9 kuchyni hledal \u010desne\u010dku, ale jak u\u017e tady na blogu n\u011bkolikr\u00e1t zazn\u011blo, \u010desk\u00e1 p\u0159edstava o \u0161pan\u011blsk\u00fdch tradic\u00edch b\u00fdv\u00e1 zhusta zkreslen\u00e1 konzumac\u00ed levn\u00e9 sangr\u00ede a \u0161patn\u00e9ho \u0159\u00eddk\u00e9ho gazpacha v&nbsp;pr\u016fb\u011bhu letn\u00edch dovolen\u00fdch na pob\u0159e\u017e\u00ed St\u0159edozemn\u00edho mo\u0159e&nbsp;? <\/p>\n\n\n\n<p>\u0160pan\u011blsko je velk\u00e1 a heterogenn\u00ed zem\u011b a j\u00eddeln\u00ed\u010dek v&nbsp;oblastech kolem Madridu a sm\u011brem na sever zahrnuje tepl\u00e1 a syt\u00e1 j\u00eddla, kter\u00e1 v&nbsp;zim\u011b (zejm\u00e9na v&nbsp;hornat\u011bj\u0161\u00edch oblastech) maj\u00ed svou nezastupitelnou funkci. Pr\u00e1v\u011b sem spad\u00e1 i sopa castellana, pol\u00e9vka p\u016fvodem z&nbsp;regionu Castilla y Le\u00f3n. Ko\u0159eny tohoto pokrmu jsou veskrze skromn\u00e9 &#8211; &nbsp;v&nbsp;historii \u0161lo o velmi b\u011b\u017en\u00fd ob\u011bd chud\u00e9ho obyvatelstva, kter\u00fd vyu\u017e\u00edval zbytky chleba z&nbsp;p\u0159edchoz\u00edho dne. Po dopoledn\u00ed pr\u00e1ci se pod\u00e1vala jako kompletn\u00ed poledn\u00ed j\u00eddlo; s\u00edlu mu dod\u00e1val nejen \u010desnek, ale zejm\u00e9na jedno a\u017e dv\u011b vejce, kter\u00e1 se vhodila do u\u017e hotov\u00e9 pol\u00e9vky a nechala se p\u016fsoben\u00edm tepla pomalu uva\u0159it. Tuto pol\u00e9vku m\u016f\u017eete dnes pochopiteln\u011b ochutnat nejen v&nbsp;Kast\u00edlii, ale i v&nbsp;mnoha ostatn\u00edch oblastech \u0160pan\u011blska, nav\u00edc jde &nbsp;o typicky postn\u00ed j\u00eddlo, kter\u00e9 \u010dasto tvo\u0159\u00ed sou\u010d\u00e1st p\u0159edvelikono\u010dn\u00edho j\u00eddeln\u00ed\u010dku. Pro \u00faplnost dodejme, \u017ee se tak\u00e9 jedn\u00e1 o velmi spolehliv\u00fd prost\u0159edek proti nep\u0159\u00edjemn\u00e9 kocovin\u011b.<\/p>\n\n\n\n<p>Z\u00e1kladem pol\u00e9vky je krom\u011b vody, \u010desneku a sladk\u00e9 papriky tak\u00e9 den (p\u0159\u00edpadn\u011b n\u011bkolik dn\u00ed) star\u00fd chl\u00e9b <em>hogaza<\/em>, zpravidla nakr\u00e1jen\u00fd na tenou\u010dk\u00e9 pl\u00e1tky, kter\u00fd vs\u00e1kne tekutinu a dod\u00e1 pol\u00e9vce jej\u00ed hustou konzistenci. \u0158\u00edk\u00e1 se, \u017ee chl\u00e9b v&nbsp;n\u00ed zastupuje maso, a \u017ee sladk\u00e1 paprika zase vytv\u00e1\u0159\u00ed iluzi choriza. Hogaza sice zvenku vypad\u00e1 jako n\u00e1\u0161 \u010desk\u00fd bochn\u00edk, ale je to chl\u00e9b p\u0161eni\u010dn\u00fd, a proto jej v&nbsp;na\u0161ich podm\u00ednk\u00e1ch nejl\u00e9pe nahrad\u00edte postar\u0161\u00ed b\u00edlou bagetou. P\u0159ipravte si pe\u010divo &#8211; zhruba polovinu men\u0161\u00ed bagety nadrobte (nebo nakr\u00e1jejte) na kousky a dejte stranou. Stejn\u00fdm zp\u016fsobem nalo\u017ete i s chorizem nebo su\u0161enou \u0161unkou a nakr\u00e1jejte jej na drobn\u00e9 kosti\u010dky nebo natrhejte na kousky. Strou\u017ek\u016fm \u010desneku od\u0159\u00edzn\u011bte bub\u00e1ky, ale neloupejte je.<\/p>\n\n\n\n<p>Do rendl\u00edku dejte rozeh\u0159\u00e1t olivov\u00fd olej, mno\u017estv\u00ed zhruba takov\u00e9, aby pokrylo jeho dno. Vho\u010fte cel\u00e9 strou\u017eky \u010desneku a chv\u00edli op\u00e9kejte, aby olej nat\u00e1hl \u010desnekovou v\u016fni. Pak strou\u017eky vyndejte, oloupejte a nakr\u00e1jejte na kousky, za chv\u00edli p\u0159ijdou zase ke slovu.<\/p>\n\n\n\n<p>Na rozp\u00e1len\u00fd olej vho\u010fte jam\u00f3n nebo chorizo a op\u00e9kejte. P\u0159isypte nadroben\u00fd chl\u00e9b a taky ope\u010dte, p\u011bkn\u011b jej prom\u00edch\u00e1vejte, aby nas\u00e1kl v\u016fni uzeniny a \u010desneku. Pak vho\u010fte zp\u011bt \u010desnekov\u00e9 pl\u00e1tky a je\u0161t\u011b chvilku op\u00e9kejte, n\u00e1sledn\u011b odstavte rendl\u00edk z ohn\u011b a vsypte jednu rovnou l\u017ei\u010dku sladk\u00e9 papriky. Prom\u00edchejte, osolte a vlijte p\u0159ipravenou vodu. Na m\u00edrn\u00e9m plameni v\u0161echno pova\u0159te 10 &#8211; 15 minut. Nakonec do pol\u00e9vky p\u0159idejte dv\u011b rozklepnut\u00e1 vaj\u00ed\u010dka a m\u00edrn\u011b sem tam prom\u00edchn\u011bte vidli\u010dkou, aby se v pol\u00e9vce roztrhala a uva\u0159ila. Ihned serv\u00edrujte.<\/p>\n\n\n\n<p>A to je v\u0161echno!
